That first pizza was good, but I knew there was more I could do. Soon my computer was filled with pages and pages of dough-making techniques, sourdough feeding schedules, and sauce ideas. I went from thinking “Pizza is pizza,” to being deeply invested in the New York – Neapolitan rivalry, amongst other areas of ‘Za Philosophy.
Everyone has their own favorite. New York, Italian, Chicago, Detroit, New Haven, “tavern” style, the varieties and opinions are endless. We all remember our first good pie, and if you don’t – that just means you haven’t had it yet. It’s a new era, this world we live in, and that means it’s time to leave delivery behind.
